Agave Sweetened Muffins

By popular demand (well two of you asked) here is my agave sweetened blueberry muffin recipe.


Preheat oven to 350 degrees
 
Mix, 1/2 cup agave
3/4 cup of butter (softened)
1 tablespoon of Vanilla
2 large eggs
in a large bowl and set aside.

Add 2 cups of flour
1/2 teaspoon sea salt
1/2 teaspoon baking soda
Mix well
(you may need to add a few drops of water to make the mixture moister)

stir in 1/2 cup of blueberries.

Spoon the mixture into paper baking cups and bake 20-25 minutes.

Let cool and enjoy.

These even passed Mr. 20 year old's taste test, that says something!

Yum! Those do look good Meredith. I just got home from the doctor. He said I'm fine to fly but the pain will most likely linger for several weeks. Oh well. I'm just glad I can go help out now. Hubby wouldn't think of me driving alone. (1560 miles but who's counting) lol
