I have a huge sweet tooth. Let me just say really huge, but I have a big problem, I am pretty severely hypoglycemic. I am unable to eat any sugar, honey, maple syrup, or artificial sweeteners, I get by with fruit juice and agave. For a long time I was able to eat malt sweetened chocolate chips made by Sunspire, but then they stopped making them and I was so mad. Recently my husband found some at our local health food store. They are sweetened with rice syrup now, something I tend to stay away from, but in small doses I can handle. So this past weekend I made a batch of chocolate chip cookies, yum, I am in Heaven.
These aren't as sweet as your normal cookie made with sugar or honey, but they are pretty darn good especially for someone like who loves to eat sweets but whose body can't handle them. I think I may have given you this recipe before, but I am so excited to have them back in my life I am giving it to you again. These are based on a recipe my sister Claudia gave me which I tweaked a bit.
1 egg
1/2 cup agave
1/2 cup butter melted
1/4 cup oil
3 tbsp water
3 tbsp water
2 tsp vanilla extract
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1- 1 1/2 cups chocolate chips
* I also add 1/3 cup sliced almonds
* and I add Crispy Brown Rice Cereal sprinkled in to add crunch, my brand Erewhon is fruit juice sweetened
Preheat oven to 375 degrees.
In a smaller bowl add all liquid ingredients and mix well. Add liquid mixture to flour, baking soda, and salt, mix together. Add chips, almonds and sprinkle in brown rice cereal. Scoop out onto cookie sheet and bake, around 10 minutes.
I usually double my batch and add in extra flour if needed. Store in the freezer and you always have yummy cookies on hand.
They do not flatten out like regular cookies but they sure are yummy.

I always feel better having visited her as her blog is a place of peace for me, a place where I feel I can visit and find someone real, not all fluff and staged beauty, but a life that is lovely but also has the ups and downs we all have. a tea party sounds awesome! I use agave in allot of things too, bummer you can't use some of the no sugars-I like stevia in some things, and there are some fruit sugars available now too. enjoy those cookies!

So glad you (hubby) found the ingredients for your cookies. I can say I love cookies too, all sweets, but I try not to make many too often cause they always seem to find their way into my mouth and then go straight to the hips and anywhere else. I sure want to make some special ones for the upcoming holidays. Your recipe looks good. I'm sure it is a lot healthier than all the other ones that are loaded with sugar, calories and carbs.

Delicious looking cookies! I'll have to give them a try. I even have some agave in the cupboard (I like it in my iced tea). Have you heard of the blog Elana's pantry? She makes a lot of gluten free baked goods, but she only uses agave or honey in her recipes. They are very low in sweetener.

I just bought some agave today. Haven't tried it yet. My son has been begging for chocolate chip cookies so I made some the traditional way, which I don't eat since I'm vegan -- so for me I made an oat bread with coconut and walnuts and dried cranberries. Yummy with a cup of tea. I'd love to come and sit with you a spell. Best wishes, Tammy

Your biscuits look great. It is such a good idea to keep some dough in the freezer - so much easier to make another batch isn't it (I don't have a very big freezer, so don't do this very often - I so wish I could do it more)
